A rich, velvety chocolate mousse finished with a drizzle of Damya Biodynamic Organic Olive Oil. Simple, indulgent, and quietly unexpected.

In Tunisia, olive oil isn’t reserved for savory dishes. It’s part of everyday cooking, including desserts, where its texture and flavor elevate even the simplest recipes. In this mousse, Damya Biodynamic EVOO adds a silky gloss and a subtle fruitiness that deepens the chocolate rather than competing with it. The result is something refined but effortless — a dessert that feels both classic and new.

 

🛒 Ingredients:

  • 100g dark chocolate

  • 20g Damya Biodynamic Organic Olive Oil (≈ 1½ tbsp)

  • 20g sugar

  • 2 eggs (yolks and whites separated)

  • Pinch of salt

  • Fleur de sel, for finishing

 


 

Recipe Instructions:

  1. Melt the chocolate
    Break the chocolate into pieces and melt using a bain-marie (a bowl over simmering water) until smooth. Stir in the Damya Biodynamic olive oil and let cool slightly.

  2. Incorporate the yolks
    Whisk the egg yolks into the melted chocolate one by one until the mixture becomes thick and velvety.

  3. Whip the whites
    In a separate clean bowl, whisk the egg whites with a pinch of salt until stiff peaks form.

  4. Fold gently
    Fold one-third of the whipped whites into the chocolate to lighten it, then gently fold in the rest. Avoid overmixing to keep the airy texture.

  5. Chill
    Refrigerate for at least 2 hours until set.

 


 

✨ The Finishing Note:

Just before serving, remove the mousse from the fridge. Add a pinch of fleur de sel and finish with a generous drizzle of Damya Biodynamic Olive Oil.

The olive oil melts gently into the cold chocolate, enhancing its depth and smoothing the texture. Notes of green almond and artichoke balance the richness, while a subtle peppery finish keeps each bite clean and layered.
