Tomato, Olive & Caper Bruschetta with Anchovy

Mediterranean Flavor, Built on Great Ingredients 🍅🫒

Some recipes are all about restraint. A few ripe tomatoes, good bread, briny olives, salty capers, and a generous pour of exceptional olive oil. That's all you need!

This bruschetta takes inspiration from the Mediterranean table, where simple ingredients are allowed to shine. Damya Biodynamic Organic Extra Virgin Olive Oil forms the foundation of the dish, mingling with sweet tomatoes and their juices to create a light dressing right on the plate. Finished with anchovy and fresh parsley, every bite delivers brightness, richness, and just the right amount of savory depth.

 


 

🛒 Ingredients

  • 3 ripe tomatoes

  • ½ cup pitted olives (mixed green and black), chopped

  • 2 tbsp capers, drained

  • 3 tbsp flat-leaf parsley, finely chopped

  • 4 tbsp Damya Biodynamic Organic Extra Virgin Olive Oil

  • ¼ tsp fine salt

  • ¼ tsp freshly ground black pepper

  • 4 anchovy fillets in oil

  • 4 slices rustic country bread or sourdough

 


 

👩🍳 Instructions

1. Prepare the tomatoes

Finely chop the tomatoes into a small dice, or grate them for a looser texture. Set aside.

2. Chop the remaining ingredients

Roughly chop the olives and capers, then finely chop the parsley.

3. Create the base

Drizzle about half of the Damya Biodynamic Olive Oil across a wide serving plate in a generous swirl.

4. Layer the tomatoes

Spread the tomatoes evenly over the olive oil.

5. Add the flavor

Scatter the olives, capers, and parsley across the tomatoes.

6. Season and dress

Season with salt and pepper, then drizzle over the remaining olive oil. Gently fold everything together right on the plate, allowing the tomato juices and olive oil to mingle.

7. Toast the bread

Toast the bread until golden, crisp, and lightly charred around the edges.

8. Assemble and serve

Spoon a generous mound of the tomato mixture onto each slice of toast and finish with an anchovy fillet. Serve immediately.


 

✨ Serving Tip

Use the ripest tomatoes you can find. They are the heart of this recipe.

For extra depth, rub a peeled garlic clove over the warm toast before assembling. The heat from the bread will release just enough garlic aroma without overpowering the other ingredients. And because the anchovies and capers bring natural salinity, taste before adding additional salt.
