A Tunisian Classic, Melted and Made Your Own!
Chakchouka (shakshuka) is one of Tunisia’s most beloved comfort dishes; a humble, deeply flavorful skillet of tomatoes, peppers, garlic, and olive oil that’s been simmering in North African kitchens for generations. Traditionally served with eggs gently poached in the sauce, chakchouka is a celebration of simple ingredients brought to life with heat, spice, and good olive oil. In true DAMYA fashion, we’ve given it a creamy twist: melted mozzarella layered over a rich, harissa-kissed base.
It starts with garlic gently sautéed in Damya Delicate Organic Olive Oil, releasing that unmistakable aroma that signals something good is coming. Add sliced green onion, ripe tomatoes, and bell peppers, season with salt, pepper, and basil, then stir in a spoonful of Damya Harissa for warmth and depth. Let it simmer briefly until the flavors mingle, then top with mozzarella and cover the pan until the cheese melts into the sauce. Finish with fresh parsley and thin slices of raw onion for brightness.
Serve it straight from the skillet with crusty bread to scoop every last bite. It’s bold, comforting, and rooted in Tunisian tradition; the kind of dish that turns everyday ingredients into something worth gathering around.
